PEAK DISTRICT DELI'S TRADITIONAL BRITISH

Starter

Garden pea soup, ham hock and sour dough

Main Course

Beef and carrots in dark beer with parsley and horseradish dumplings, creamy mash potato, runner beans, spring greens and buttered cabbage // Parsnip and carrots in dark beer

Dessert

Granny Fozard's Sticky Toffee Pudding, vanilla cream

Menu Tasting Notes

Beef and beer - Delicious, tender beef shin partnered with a local, warming dark beer. The stout mellows in the oven to a lovely deep, chocolatey flavour.

Sticky toffee pudding - An inherited recipe. Made using Mejdool dates, a rich and delicious pudding but surprisingly light and addictive.

Starter

Pyclet, Cow Close Farm curd, beetroot, whipped horseradish, summer leaves

Main Course

Slow and sticky feather blade of beef, gremolata polenta and mushrooms, smashed celeriac, roast cauliflower and purple sprouting broccoli with walnut and tarragon dressing // vegetarian - Dovedale blue, chard and walnut Wellington

Dessert

Rich, dark chocolate torte, raspberries and creme fraiche

Pyclets - Known as English blinis or flattened crumpets, a local savoury delicacy

Derbyshire feather blade - Cooked for 8 hours, sticky, rich and tender beef

Gremolata - Gremolata is an Italian condiment made from parsley, garlic and lemon zest

Broad bean and pea bruschetta, organic cheddar, slow roasted & smoked tomatoes

Main Course

Porchetta, crackling and red currant gravy, roast squash purée, buttered chive potatoes, wilted greens, red cabbage, apple and radish salad // Berlotti beans, spinach and green herbs

Renishaw Fizz Jelly, summer fruits and vanilla creme anglaise

Bruschetta - An antipasto from Italy, grilled sourdough rubbed with garlic, extra virgin olive oil and salt

Porchetta - A classic Italian dish of rolled pork belly or loin with a deliciously herby, fruity stuffing, cooked low and slow. Indulgent.

Renishaw fizz - from the most northern award wining vineyard

Creme anglaise - A thin, smooth, vanilla pouring custard

Beef and aubergine fatteh

Main Course

Harissa-marinated lamb with chickpea purée, roast carrots, peppers, courgettes and fresh mint, pomegranate and cucumber labneh // Harissa-marinated crown prince squash

Dessert

Orange blossom and vanilla panna cotta, pomegranate and edible flowers

Menu Tasting Notes

Fatteh - A warm salad of crispy flatbread, smokey aubergine and beef, garlic tahini-yoghurt, chilli, pomegranate seeds, toasted nuts and fresh mint

Harissa - This is a fiery North African paste - roasted peppers, dried red chillies, garlic, caraway seeds, ground cumin and coriander

Labneh - One of Peak District Deli's specialities. Made using strained yoghurt, it's tangy, thick and creamy, similar to cream cheese.

Panna Cotta - Simple, yet elegant dessert, Italian for "cooked cream"

Fresh Spring rolls - Originating from Vietnam, using rice paper pancakes. These are fresh, zingy and full of flavour.

Bibimbap - Centred around marinated succulent chicken and surrounded by multiple sautéed vegetables, salads and sauces, this is a Korean staple
